The ancestral method, as it once was
From the steepest south-west facing vineyards, between 130 and 150 metres, comes our bottle-refermented wine. Naturally sweet grapes, hand-picked, softly pressed and fermented with indigenous yeasts.
The ancestral refermentation lasts 40–60 days, followed by at least 18–20 months of vertical bottle ageing. The result is a wine of extraordinary freshness and minerality.

From pale yellow to gold; fine perlage, creamy mousse.
